Guatemala | Hunbatz | Washed

In Mayan mythology, Hunbatz is the Howler Monkey god—the patron and protector of artists, musicians, and craftsmen. It’s a fitting name for a coffee that requires so much care from farm to roaster. Sourced from the highland regions of Guatemala and beautifully washed to highlight its natural clarity, this bean represents the very best of artisanal coffee production.

A beautifully clean, bright, and classic Central American cup. Expect a smooth, milk-chocolate base perfectly balanced by a crisp citrus acidity and a sweet, lingering toffee finish. It’s exceptionally well-rounded, making it just as brilliant for a morning filter coffee as it is for a vibrant espresso.

  • Process: Washed (Clean and vibrant)

  • Roast Profile: Medium (Crafted to highlight balance and sweetness)

  • Best Brewed As: Cafetiere, Pour Over, or a bright Espresso

Mexico Quetzal

(Mountain Water Decaffeinated)

Named after the Resplendent Quetzal—the legendary, vibrant bird of the Guatemalan cloud forests that symbolizes freedom and wealth—this exceptional coffee proves that choosing decaf never means compromising on character. To preserve its complex origin notes, the green beans undergo the non-chemical Mountain Water Process. Immersed in pure, glacial water from Mexico’s highest mountains, the caffeine is naturally dissolved away, leaving a spirit that is 99.9% caffeine-free but 100% full-flavoured.

Forget everything you think you know about decaf. This is a remarkably clean, sweet, and comforting cup. It opens with a warm, comforting aroma of brown sugar and roasted almonds, settling into a smooth milk-chocolate body with a very gentle, crisp applefinish. It’s rich, satisfying, and completely indistinguishable from a standard specialty roast.

  • Origin: Guatemala (Huehuetenango region)

  • Process: Mountain Water Decaf (100% Chemical-Free)

  • Roast Profile: Medium-Dark (Developed for a rich body and deep sweetness)

  • Best Brewed As: Espresso, Latte, Moka Pot, or an all-day Cafetière

Uganda African Moon (Natural)

Towering over Western Uganda, the snow-capped Rwenzori range is steeped in legend. Ancient explorers called them the "Mountains of the Moon"—the mythical, mist-shrouded source of the River Nile. Grown in this fertile, high-altitude volcanic soil by smallholder families, this coffee is a Natural Process masterpiece. The cherries are sun-dried whole on raised beds for up to 30 days, allowing the beans to absorb the maximum natural sugars from the fruit before being milled.

A beautifully rich, heavy, and complex cup that showcases the best of natural processing. It bursts with a deep, jammy sweetness reminiscent of ripe cherries, blackberries, and plums, all perfectly balanced by a dense milk chocolate body and a smooth, comforting caramel finish. It is exceptionally bold and crowd-pleasing, making it the ultimate choice for a luxurious flat white or a full-bodied cafetiere.

  • Origin: Uganda (Rwenzori Mountains)

  • Process: Natural (Sun-Dried, fruit-forward, and sweet)

  • Roast Profile:Medium (Crafted to maximize the juicy fruit and rich cocoa body)

  • Best Brewed As: Espresso, Flat White, Cafetière, or a bold Aeropress
