Harvested from our hives situated along the Grand Union Canal at Bascote Locks, this honey is the very essence of a Warwickshire spring. As the countryside wakes up, our bees forage on the abundance of early-season blossoms—hawthorn, blackthorn, wild cherry, horse chestnut, and the brilliant yellow fields of oilseed rape. The result is a hyper-local, completely raw honey that captures a specific moment in time in our canalside hedgerows.
Our Spring Honey is beautifully pale, delicate, and naturally sweet with subtle, clean floral notes. Because spring forage—particularly oilseed rape—is naturally high in glucose, this honey has a wonderful characteristic: it sets rapidly into a smooth, fine-textured, naturally crystallized or creamed state. It is incredibly luxurious and spreadable, making it absolutely perfect for slathering onto warm, fresh sourdough.
